Valentine's Day

Valentine's Day started out as a sad day for me.   I felt badly for my children because they had no Valentine school parties to attend.   I let the date sneak up on me and did not organize a party.   So, I made an effort to make it a fun day.   They woke to find their goody bags and they brought me breakfast in bed.   They decorated heart-shaped sugar cookies for neighbors and friends.   It was such fun for them to deliver them!   In the evening, they had a surprise delivery by friends which touched my heart.   They said they had a great time and once again, I worried too much.

I have not been this excited about an approaching Lenten season since 2003, right before we found out we were expecting Emmeline.   Since then, it seems I've either been pregnant or nursing, so the food-related aspects of Lent weren't as much a part of the observances.   That seems to affect the whole season, no matter what else I might have given up or added.   I'm sure it's because I pushed the boundaries by including foods like chocolate that were not necessary to a healthy diet for pregnancy and nursing. Now, on a completely non-sentimental note, I have found a most amazing product.   As a southern cook, I usually only think of Martha White flour, and then mostly in its self-rising form.   Recently, I decided to try another Southern favorite, White Lily flour, for the first time.   It is beautiful flour; it is so fine that it is almost like cake flour and it makes the lightest biscuits, muffins, scones, and cakes.   Yes, I go back to my gym sessions Monday!   How have I been without this flour all these years?! Also, I have followed another piece of wisdom from one of my culinary heroes, Ina Garten.   I have switched to buying only extra-large eggs and my meringues have never been higher or fluffier!    It has made a huge difference in my baking.   And she's also right about adding coffee to chocolate recipes.   It does intensify the flavor of the chocolate.   Thank you, Ina!
